Healthy Chicken Tacos

I made these a couple of times last week and Mike and I loved them.  I think they taste a lot like fajitas.  This made enough for 2 adults.

  • 2 chicken breast
  • liquid aminos (found at grocery stores in the healthy food section) can substitute with soy sauce but soy sauce has added salt
  • garlic powder
  • olive oil spray
  • onion, sliced or chopped
  • 4 corn tortillas, warmed (check for only corn, lime, and water listed on the ingredients label)
Garnish:
  • lettuce, chopped or shredded
  • tomato, diced
  • light or f/f sour cream
  • salsa
  • r/f cheddar cheese, shredded (I like Cabot's 50% or 75% light)
Slice raw chicken and marinate in Liquid Aminos (I didn't measure, but it was probably 1/4 cup or less) and sprinkle heavily with garlic powder.  I marinated mine for a few hours one time and overnight the other time.  Both times were great. 

Saute onion in a spray of olive oil until onion is slightly browned.  Add chicken and marinade to pan.  Saute until chicken is fully cooked.   Serve in warm corn tortillas with any (or all) the garnishes you'd like.
