Healthy Turkey Sage Sausage

This recipe was submitted be Jeanna Lashley, but it is a Flying Biscuit recipe.  Thanks Jeanna!!!  Keep the recipes coming!  This one looks great.  I'd hope to try it soon!

Sagey Apple Turkey Sausage

1 lb. lean ground turkey

1 T unsalted butter (I'll leave this out or use olive oil instead)

1 T minced fresh sage

1 1/2 tsps minced fresh rosemary

1 Granny Smith apple, peeled and diced

1/4 c minced yellow onion

1/4 tsp white pepper

1/4 tsp cayenne pepper

1/2 tsp kosher salt

dash of freshly grated nutmeg



1. Place ground turkey in large mixing bowl.

2. Melt butter (olive oil) in a medium saute pan over medium heat. ( You can just spray with Pam, but it is a nominal amt of fat for the entire recipe) Add sage, rosemary, diced apple, and onion and cook until onions are soft and translucent. Cool mixture completely and add to turkey.

3. Season turkey with white pepper, cayenne pepper, salt, and nutmeg. Mix all ingredients by hand until just combied. Form into eight 2 1/2 inch patties.

4. Heat a large nonstick saute pan over medium-high heat. Cook sausage patties until lightly browned, about 3 to 5 minutes per side.



Makes 8 patties, serving 4 people.
